'Loaded sweet potato' Wash and dry the sweet potatoes. Prick
skin a few times on each side w/ a fork and bake at 400 degrees
for 1 hr. Cook chickpeas at the same time(direction in other
recipe). With about 10 minutes left of the potato cooking, sauté
spinach with salt and pepper. When potato is done slice from
end to end, lightly mass the insides with a fork, season with salt and paper. Add the
spinach,
roasted chickpeas, and cranberries. Serve hot! I saved the skin
for last to eat w/ ketchup- personal preference ;)
