8 oz. baby spinach (I remove stems and chop slightly)
3 Cups chicken broh
1 can (14-1/2 oz) crushed tomatoes
1 can (28 oz) white beans, drained
3/4 Cup cubed cooked ham
1 tsp. chopped parsley
1/4 tsp allspice
1/4 tsp red pepper flakes
Instructions
Cook 2 slices of bacon in soup pot until crisp, about 4 minutes. Remove bacon and crumble. Set aside.
Add onion and celery to pot and season with salt. Cook until softened, about 8 minutes. Stir in garlic and cook one more minute. Add spinach, chicken broth, tomatoes, white beans, ham and parsley and stir. Add allspice and red pepper flakes and cook for 20 minutes. Garnish with bacon.
NOTE- Recipe originally called for 1/2 tsp. each allspice and red pepper flakes, which was very good, but had quite a bite. I cut it back to 1/4 tsp each.
