Preheat oven to 425. Choose small sweet potatoes. Scrub potatoes and remove skin.
Slice sweet potatoes into chips.
In a large bowl, toss sweet potatoes in just enough olive oil to lightly coat them.
Sprinkle salt and cinnamon over potatoes once they are coated with oil.
Bake for about 20 minutes, or until the chips are tender.
Be careful not to burn!
