2 tsp. vanilla

2 eggs, beaten

Instructions |

|
Combine Dry ingredients.
|

Add apples, carrots, coconut, nuts, and raisins. Mix.
|

Add oil, milk, vanilla, and eggs. Stir until moist.
|
|

Bake at 350 for 20-35 minutes. Makes 18 muffins.
