In a medium saucepan, cook macaroni according
to package. Drain and set aside. Saute onion in
the butter, add milk, salt, pepper and flour
and whisk together over medium heat, stirring
constantly, until thickened.
Add cheese. Stir until smooth. Combine noodles and sauce. Stir in
meat. Sprinkle additional cheese.
Sprinkle with additional cheese if desired.
To make a larger serving, 1 lb noodles cooked with 1/2 tbsp salt, 1/4
cup
butter, 1/4 cup flour, 1 cup milk, 1 1/4 cup heavy
cream, 1 tsp salt, 1/2 tsp pepper, 2 cups cheese (add 1/2 to 1 cup
more on top)
