Heat oven to 350 degrees. Brown sausage in a
large skillet and remove from pan and set
aside. Add diced bacon to skillet and cook
until brown, remove and set aside, reserving 2
tbsp bacon grease in the pan. Add mushrooms,
onion, bell peppers and hashbrowns to the
skillet and cook until veggies are softened.
Mix in velveeta cheese with the veggies, until
cheese is melted and combined. Wisk eggs, sour
cream, cheddar cheese and reserved bacon in a
bowl. In a 13x9 pan, layer the cooked sausage,
followed by vegetable mixture, then top with
egg mixture. Bake for 40mins or until the
center is set and casserole is heated through.
If you're feeling extra decadent, top with even
more cheese and place under the broiler for a
couple minutes. Allow to rest 10mins before
serving.
