6 qts water or veg broth
|
|
1 lb tomatillos
|
|
2 jalapeno peppers
|
|
1 med yellow onion chopped
|
|
6 garlic cloves
|
|
1 can crushed tomatoes (28 oz)
|

1 can hominy (29 oz)
|
|
2 T oregano
|
|
4 bay leaves
|
|
|
|
2 dried cascabel chiles
|
|
limes, cilantro, shredded cabbage
|

Instructions |
|
|
Combine tomatilllos, jalapenos, onion, garlic, and 2 1/2 c broth.
Bring to a boil; cook until soft (20 min) Process in food processor
until smooth
|

Stir mixture in to remaining broth, add tomatoes, hominy, oregano
bay leaves. Bring to a boil. Then simmer 1 hour.

|
Soak chiles in 1/2 c hot water (30 min), drain, reserving soaking
liquid. Process chiles and 2-3 T soaking liquid until smooth.
|
|
|
Strain chile mixture, add liquid to soup.
|

Suggestions |
|
serve with lime, cilantro, and cabbage.
