     Honey Lemon Chicken

Ingredients
1.5 lbs boneless, skinless chicken cut into bite sized pieces
3 tbsp soy sauce
2 tbsp rice wine vinegar
Salt
Pepper
1 tbsp olive oil
Sriracha
Optional- sesame seeds, green onions, lemon wedges
 
Honey lemon sauce ingredients
3/4 cup chicken stock
1/4 cup lemon juice
3 tbsp honey
2 tbsp cornstarch
Pinch of ground ginger

Instructions
Combine chicken, soy sauce and rice wine vinegar in large ziplock bag. Toss until chicken is heavily coated. Refrigerate 10 minutes. Season chicken with salt and pepper. Before sauteing.
Heat oil in larch saute pan over medium-high heat. Saute chicken for 5-7 minutes. Make honey lemon sauce while cooking. Transfer to clean plate.
Cook lemon sauce in saute pan for 2-3 minutes over medium-high heat until reaches a low boil and thickens. Add sriracha.
Add chicken back in pan and toss until evenly coated.
