Preheat oven to 350 degrees Farenheight. Grease
and flour a 9-inch loaf pan.
In a large bowl, combine butter, 1 cup sugar and
lemon extract; beat eggs into the mixture.
Meanwhile, in a separate bowl, sift together
flour, baking powder and salt and add to butter
mixture. Pour in milk gradually, beating just
enough to blend; fold in lemon rind.
Pour batter into loaf pan and bake 1 hour, or
until a toothpick comes out clean; let cool 10
minutes and remove from pan.
Mix lemon juice and sugar and, while still hot,
pour over top of loaf and into any cracks formed
while baking.
When completely cool, wrap tightly in foil and
store 24 hours before slicing.
