1 large onion, chpped
|
|
4 tsp. cooking oil
|
|
3 T. flour
|
|
2 cups asparagus, chopped in 1 inch pieces
|
|
2 c. milk
|
|
1 can chicken broth (14 1/2 oz.)
|
|
1-1/2 c. diced potatoes
|
|
1/4 tsp. salt
|
|
1/8 tsp. ground red pepper
|

Instructions |
|
|
Saute onion until tender. Sprinkle flour over onion and stir to coat. Add asparagus, milk, broth, potatoes, salt and red pepper.
|

Cook and stir until thick and bubbly; reduce heat. Simmer covered for 10-12 minutes stirring occasionally. Add cheese. Top with sour cream.
