Preheat oven to 375F. Grease muffin pans. Sift
flour, baking powder, salt and cinnamon in a
medium bowl. Set aside.
Toss together diced apples, 2 tsp flour to coat
apples in separate bowl. Set aside.
Cream together butter & sugar until lightened
in colour, about 3 minutes. Add an egg, one at
a time, taking care to fully incorporate before
adding another. Mix in vanilla. Gently fold in
flour mixture, alternating with milk. Stir
until just combined. Fold in diced apples and
scoop mixture into pans filling to 2/3-3/4
full. Bake until toothpick comes out clean,
about 30 mins.
Prepare topping by melting butter and allowing
to cool slightly. Mix together sugar and
cinnamon in SEPARATE bowl. Set aside. Once
muffins have baked, removed from oven and allow
to cool slightly in pans. Then, remove each
muffin and dip first in butter then in cinnamon
mixture. Place onto a plate to finish cooling.
