Combine egg, salt and pepper; beat with wire wisk
until blended. Combine crumbs and Parmesan
cheese, stirring well. Dip veal into egg mixture
and dredge in crumb mixture. Saute veal in large
skillet that has been sprayed with the vegetable
spray. Cook until golden brown. Transfer veal
to a shallow baking dish. Pour tomato sauce over
veal with grated mozzarella. Bake at 350 degrees
for 20 - 30 minutes.
