Peel, chop SP into small chunk.
Let them boil for 15 to 20 mins
Meanwhile chop carrots, onion, celery into small chunks, add to large skillet over
medium heat add tbsp water and let em soften
Add prepared lentils to pan, allow to cook with carrot mix
preheat oven to 350F
open cans of diced tomatoes (DONT DRAIN) and add along with a tbsp of basil
leaves, handful of chopped spinach, some soy sauce. Let filling simmer for 10 to
15 mins for flavors to mingle.
add lentil filling to a 9x 13 pan and top with a layer of sweet potatoes
Bake for 20 mins, allow to cool before serving
