     Smoked Sausage Vegetable Spaghetti

Ingredients
1 pkg. (8 oz.) spaghetti
2 Tbs. olive oil
1 pkg. sausage, cut in 1/2-inch slices
1 green pepper, cut in 1/2-inch pieces
1 yellow pepper, cut in 1/2-inch pieces
1 1/2 cups sliced zucchini
1 1/2 cups grape tomatoes, cut in half
1/2 tsp. garlic powder
1/2 cup chopped fresh parsley (optional)
 
1 tsp. grated lemon zest
1 Tbs. lemon juice
salt and pepper
grated parmesan cheese (optional)
fresh basil leaves (optional)

Instructions
Original title- Smoked Sausage Saute with Lemon Herb Vegetables and Pasta (by Smithfield)
Prepare pasta according to package directions; drain and reserve 1/3 cup of cooking liquid. Heat 2 tablespoons olive oil in a large non- stick skillet over medium-high heat; saute sausage 3 minutes or until lightly browned. Add peppers; cook and stir 3 minutes. Add zucchini, tomatoes and garlic powder; cook and stir 3 minutes or until zucchini is crisp-tender. Remove from heat; stir in parsley. Place cooked and drained pasta in a large serving bowl; add sausage and vegetables, reserved pasta cooking liquid, lemon zest and juice; toss to combine. Season to taste with salt and pepper. If desired, sprinkle with Parmesan cheese and garnish with fresh basil. Makes 4-6 servings.
Serving Suggestions
Leave out the sausage and it is a tasty vegetarian dish.
