Find a large pan that will fit the cauliflower. Add onions, and garlic. Slow fry for 10 minutes until softened.
Add olives, parsley and fry for another couple of minutes. Add tomatoes, then half-fill one of the tins with water and add that to the pan.
lastly put the cauliflower in, half will be in the sauce. Stir then put in the oven for 50 mins with cover if possible.
Serves 4, calories per serving 152, carbs 11.4, sugar 9g, fat 7.2, protein 7.7 (note that includes anchovies and olive oil).
