Place one cup of horse radish in a food processor. Chop till fine by pulsing. Let it sit for 3 or 4 minutes to develop heat. If you put vinegar in too soon it will have no heat. Put 3 to 5 T of vinegar and 1/2 a tsp of salt in food processor and pulse a few time scraping down the bowl to mix. One pound of horse radish makes about 2 cups of prepared horse radish. Put extra in freezer. Some people put 2 tsp of sugar in with each cup but I did not.
