1 1/4 cups butter or (2 1/2 sticks)of margarine or butter
3/4 cups firmly packed brown sugar
1/2 cup granulated sugar
1 egg
1 tsp vanilla
1 1/2 cups all purpose flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1/4 tsp ground nutmeg
3 cups quaker oats (quick or old fashion)
raisins or chopped nuts if desired ( 1 cup)
Instructions
Heat oven to 375 degrees
In a large bowl, beat the margarine or butter with the brown and white sugar until creamy.
Add the egg and the vanilla, beat well.
Combine in a seperate bowl the flour, baking soda, cinnamon, nutmeg and salt. Mix well.
Add the oats. Mix well
Add the raison and if desired nuts.
Drop by rounded teaspoonfuls onto ungreased cookie sheet.
Bake for 8-9 minutes depending on oven temp. (this makes for a chewy cookie)
Cool 1 minute on cookie sheet and then move to a wire rack to cool completely.
