Preheat oven to 375 degrees.
Caramelize onions in a little bit of olive oil.Set
aside. In a greased casserole, layer thinly
sliced potatoes,some caramelized onions, and some
of the bacon. Drizzle a thin layer (maybe 1/2 a
ladle) of cream on top. Sprinkle a little cayenne
pepper, salt and pepper over this. Repeat layers
until potatoes are gone.
Cover with foil and bake for 30 minutes. Remove
foil and continue baking for 45 minutes, or until
cream is absorbed and potatoes are cooked through
and top is brown.
