1 Serrano pepper - seeded and sliced - keep some seeds for more spicy
2 TBS vegetable oil
4 six inch flour tortillas
1/2 cup shredded monterey jack cheese
2 thin slices of tomato
1 TSP cilantro (optional)
Instructions
In skillet cook peppers and onion in hot oil over
medium heat 3-5 minutes
remove from heat set aside
Lightly coat each side of tortilla with cooking
spray. plave half of ingredients on no coated side
of tortilla, top with second tortilla, cook 4-5
minutes on each side.
Top with desired toppings
