Seasoning ratio use 1 tsp per thigh for mild, 2 for more taste
2 Tbs curry
1/2 tsp ginger
1/2 tsp dry mustard
1/2 tsp cumin
1 tsp basil
1/ tsp paprika
1 tsp corriander
1/4 tsp cinnamon
1 1/2 lbs chicken thighs or breasts cut into cubes
1/4 c olive oil, divided
2 cloves pressed garlic
1 large yellow onion diced
prepared white rice
1 tsp salt
cayenne pepper
Instructions
Blend all seasonings. Seasoning ratio use 1 tsp
per thigh for mild, 2 for more taste
Coat chicken with 2 Tbs olive oil, coat with
seasonings. Chill for 1 hour minimum for best
flavor.
In large skillet, heat remaining olive oil, add
onion and garlic cook until about half clear. Add
chicken and salt cooking until chicken is tender,
adding water as you cook for desired consistency. Sprinkle with a
little cayenne pepper as it cooks for a little kick, not too much!!
Serve over white basmati rice with sweet steamed
vegetables like carrots and corn.
