Preheat oven to 400. Line 16 muffin cups with
paper liners and spray with cooking spray.
Whisk together eggs and milk, then stir in
muffin mix and 1/2 cup cheese until well
combined.
Fill muffin cups halfway with batter and divide
pork among cups (about 2 TB each).
Top with remaining batter and sprinkle with
remaining cheese.
Bake until golden and springy to the touch,
about 20 minutes.
