Chicken
Oil in pan hot
Chicken legs and thighs in pan
Turn once browned
Add pancetta chunks into gaps
Add garlic slices and thyme sprigs
Cook till pancetta goes crispy
Add white wine 1/2 cm wait a minute should boil
Add vegetable stock from stock cube 200ml
Season with pepper only
Cover with a lid and cook for 1 hr
Take off lid
Switch off heat
Drizzle traditional (thick) balsamic vinegar
over
Put heat back on to heat balsamic for 2 mins
Plate up
Clump salad
Piece of chicken
Add pan juices and inc sprig thyme and pancetta
on top of chicken
