Cook potatoes in jackets until tender; peel and shred. (Or 1-1/2 to 2 pounds frozen and thawed hash brown or shredded potatoes may be substituted.)
Combine potatoes with sour cream, 1 c sheese and remaining ingredients except paprika;turn into buttered 1-1/2 quart casserole dish. Sprinkle with remaining cheese and paprika.
Bake in 350° oven for 30 to 40 minutes. Makes 4-6 swevings. Casserole may be assembled and refrigerated until time to bake.
