     Lady Baltimore Cake

Servings   2 - 9 inch layer pan

3/4 c shortening
2 c sugar
3 c cake flour
3/4 tsp salt
3 tsp baking powder
1/2 c milk
1/2 c water
1/2 tsp vanilla
1/2 tsp lemon extract
6 stiffly beaten egg whites
Lemon Filling
1 c suar
1 Tbsp flour
4 egg yolks
1/4 c butter
Juice and grated rind of 1 lemon

In a large bowl, cream shortening until fluffy. Beat i sugar until mixture is creamy and light. Add sifted dry ingredients alternating with water and beating smooth after each addition. Stir in vanilla and lemon extract. Carefully fold in egg whites.
Bake in 2 wax paper lined and greased 9 inch layer pans in 350 oven for 25 to 30 minutes. Cool. Lemon Filling- In double boiler combine the sugar, flour, egg yolks, butter and lemon juice and rind.
7 Minute Frosting- 2 egg whites, 1-1/2 c sugar, 1-1/2 tsp light corn syrup or 1/4 tsp cream of tartar, 1/3 c cold water, dash of salt and 1 tsp vanilla extract. To make, in a double boiler, combine all ingredients, except vanilla. Cook, beating constantly with electric beater about 7 minutes or until mixture forms peaks. Remove from heat. Add vanilla and beat until mixture reaches spreading consistency.
