1lb ground meat (sausage, beef or turkey seasoned like sausage)
1/2 tsp salt
1/4 tsp pepper
1/2 tsp onion powder
1/4 tsp garlic powder
1 bell pepper - cooked (optional, but delicious)
1 small onion
1-2 cans cream of chicken
8 eggs
cheddar cheese
Instructions
Start by cooking potatoes until they're soft.
Smaller chunks preferably. Minimum of 4 cups, but no
harm if you have more than that. You just might need
an extra can of cream of chicken.
saute the onion and bell peppers until partially
cooked, preferably in butter. Add meat and cook
until browned.
in a 13x9 mix the potatoes and meat/veggie mix with
the cream of chicken. Top with 8 eggs - well beaten.
You can add bacon bits if you fancy. Top with
cheese. Cover and cook for 45 minutes to an hour at
350 until eggs are cooked.

Great with sour cream, salsa, hot sauce or just alone!
