Add all ingredients to skillet except for salt and
pepper. Drizzle oil. Cook covered until potatoes
are tender and browned to your liking. Add salt
and pepper to taste.
Made this with leftover marinated pork chop.
Didn't add pepper because pork chop already had
some on it. Turned out very tasty. Everyone liked
it.
