Preheat the oven to 400 degrees.
Bake the potatoes until almost tender. Should
still have a little firmness to them. (45-60
minutes)
Allow to cool. Peel and grate the potatoes.

Season well with salt and pepper. Increase
oven temp to 425 degrees. Spray muffing tin
with cooking spray. Scoope 3-4 Tbls. of grated
potato into each muffin cup. Use fingers to
gently press the potatoes against the side and
bottom to make a nest shape.

Lightly spray again with cooking spray. Bake for
15-20 minutes. Make sure they don't burn. Remove
from oven when nests are golden brown.
Allow the nest to cool.

|
Crack an egg into each nest. Sprikle with salt
and pepper and bake until the whites are set.
(15ish mins.) Remove from muffin tin and serve
immediatly,
Can also scramble eggs and add any veggies you
may like into it.
