1 pound jumbo shrimp, peeled and deveined, tails on
1/2 cup mango diced (1/2 of a mango)
1/2 cup cilantro leaves
3 cloves garlic, minced
2 tablespoons fresh lime juice
2 tablespoons olive oil
1/4 teaspoon salt
Mango Salsa
1 1/4 cup mango diced (~1 1/2 mangos)
1 small avocado, diced
1 half of a jalapeño, seeded and diced
1/3 cup diced red onion
1/3 cup cilantro, roughly chopped
2 tablespoons fresh lime juice
pinch of salt and pepper
Instructions
1. To make the marinade, in a small food processor or blender, add
the diced mango, cilantro, garlic, lime juice and olive oil. Pulse until
well combined. Transfer puree mixture to a large zip lock bag. Stir
in the 1/4 teaspoon of salt. Add cleaned shrimp, seal the bag and
massage mixture to make sure everything is well combined. Place in
the refrigerator to marinate for ~30 minutes while you prepare the
salsa.
2. In a small bowl combine mango, avocado, jalapeño, red onion,
cilantro, lime juice, a pinch of salt and pepper. Stir well to combine.
3. Heat your grill to medium heat. Brush with olive oil. Skewer 4
shrimp on a small wooden skewers. Place on hot grill and cook 5-6
minutes total, flipping once.
