Preparation
1) Cut 500g chicken into bite size
2) Marinate with dark soy sauce, light soy sauce,
wine, 1tbsp sesame oil, pepper and corn starch
3) Cur ginger into strips

Cooking
1) Pour 1tbsp Sesame oil on pan
2) Heat pan on high heat till pan is very hot
(Can be smoking a little but not too much)
3) Add ginger strips and fry them till fragrant
4) Add chicken and all the marinate
5) Stir fry quickly as pan is very hot and
chicken will stick
6) Keep frying till chicken is cooked through
(This is the tricky part, you do not want to
overcook the chicken cause it will become dry,
this is by intuition and experience, if there
is too much liquid coming out of the chicken,
they are overcooked)
7) Garnish with spring onion
