In a food processor or small blender, place coarsely chopped
cauliflower and pulse blend until cauliflower resembles rice.
Empty cauliflower into a medium-sized microwaveable bowl.
Microwave on high for five minutes. Scrape sides of the bowl
down and microwave for another five minutes.
Take bowl out of the microwave. With a cheesecloth or clean
kitchen towel squeeze out excess water from cauliflower.
In a large bowl add cauliflower, butter, half & half, greek
yogurt and seasonings. Stir until completely mixed.

Serve with your choice of lean meat, poultry or seafood instead of regular mashed potatoes.
