8 lbs Roma Tomatoes, quartered and sliced

5 lbs cucumbers, peeled, quartered and sliced

|
Combine the following and pour over veggies-
|
|
1/3 cup fresh parsley, chopped
|
|
3/4 c diced onion
|
|
3 cloves minced garlic (optional)
|
|
1 Tbl dried Basil (or 1/3 c. fresh
|
|
1 Tbsp Sugar
|
|
2 tsp salt
|
|
|
|
1/1/2 tsp black pepper
|
|
2 cups olive or canola oil
|
|
1/1/2 cup vinegar (white, red wine or baslamic)
|
|
Cover tightly and allow to sit. May be refrigerated for later use or overnight
