1 cup quinoa
|
|
1/2 tsp salt
|
|
1 red bell pepper
|
|
1 carrot, peeled and grated
|
|
1 English cucumber, diced
|
|
2 scallions, finely sliced
|
|
1/4 cup chopped cilantro
|
|
2 tbsp mint or basil (optional)
|
|
|
|
DRESSING
|
|
1/4 cup lime juice
|
|
2 1/2 tsp Asian fish sauce
|
|
1 1/2 tbsp vegetable oil
|
|
2 tbsp sugar
|
|
1/4 tsp crushed red pepper flakes
|
|

Instructions |
|
|
Cook quinoa with salt. Transfer to bowl and let
cool.

Combine dressing ingredients. Whisk until sugar is
dissolved.

Once quinoa is cool, add bell peppers, carrots,
cucumbers, scallions, herbs and dressing.
|
|
|
Chill until ready to serve.
