Heat 1 tsp olive oil in small pot until hot. Add
half of garlic. Stir in rice, pinch of salt and 1
cup water. Heat to boiling, then cover and reduce
to low. Cook 12-14 minutes.
Heat 2 tsp olive oil in medium pan. Add
broccoli and season with salt and pepper. Cook
3-5 minutes.
Add ginger and remaining garlic. Season with
salt and pepper. Stir and gook another 2
minutes. Set aside.
Season chopped chicken with four, salt and pepper,
add to pan when hot enough it sizzles. Cook,
stirring occasionally for 5-7 minutes until
browned.
Add cooked broccoli, sesame oil, hoisin sauce,
vinegar and white bottom of scallion, 1/4 cup
water and as much sambal as you want. Cook
another 2-3 minutes.
Serve over jasmine rice. Garnish with scallion.
