1. Combine milk, double cream, crème fraiche, grated nutmeg and
pepper to taste, until smooth.
2. Very finely slice potatoes and mix with cream/milk mixture.
3. Finely slice onions.
4. Prepare oven dish, lightly buttered, layer onion and potatoes (1
layer onion for every 3-4 layers of potato), finishing with layer of
onion.
5. Pour remainder of cream mixture on top of potatoes/onion.
6. Grate enough cheese to fully cover.
On the day-
1. Preheat oven 200 deg.
2. Bake for about 1 hour until golden and potatoes are thoroughly
cooked (reduce heat if sauce dries out).
