Buy bread bowls at Save On Foods.
Take the centre out of the buns, but don't scrape right off the wall of
the bun, leaving some of the soft bread inside.
Brush inside of the bread bowl with olive oil and bake for about 2
minutes. It will crisp up.
If using baguettes to scoop with. Slice the baguettes (artisan breads) and brush one side with
olive oil. Bake till crisp.

Suggestions
You can use the soft bread from inside as the bread to scoop with. Baguettes or crackers work too.
