Juice and grate the rind of 2 limes. Put aside. Cut the peppers put
aside. Cut the uncooked chicken into bite size pieces. Mix the
chicken with the chilli powder, paprika, 2 T olive oil, lime juice and
some of the lime zest. Toss it altogether and cover and put into the
fridge for 1 hour.

Serve the sauce in one bowl, the meat in another bowl, the lettuce in a bowl, the sour cream in a
bowl, salsa in a bowl and the warm tortillas on a plate. Each person dishes their own. Dish the
chicken mixture onto a tortilla then pour sauce over the chicken. Add sour cream, salsa and
lettuce if desired. Then the tortilla is rolled up and eaten.
