1 can 15oz. reduced sodium black beans
|
|
1/4 tsp. garlic salt
|
|
2 cups cooked brown rice
|
|
1 cup canned fire-roasted corn
|
|
1 diced avocado
|
|
16 pickled jalapeno slices
|
|
1/2 cup salsa
|
|
1/2 cup tortilla chips
|
|
Dressing-
|
|
|
|
1 roasted red pepper
|
|
1 Tbs. olive oil
|
|
2 tsp. lime juice
|
|
1 tsp. agave nectar
|
|
dash of hot sauce
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|

Instructions |

|
In a blender, puree all the dressing ingredients.
Season to taste with salt.

In a small saucepan,combine the beans, their
liquid, and garlic salt.
Cook over medium heat until warmed through, about
5 minutes.

|
Divide beans, rice corn, avocado, jalapeno, salsa
and tortilla chips among 4 shallow bowls.
Drizzle with dressing.
