Bring 3/4 cup water and 1/4 cup milk to a boil and pour in to a large
mixing bowl. Add potato and mix until blended. Heat remaining milk
and pour over potato, add margarine, sugar and salt. Cool to
lukewarm. Add yeast which has been softened in 1/2 cup lukewarm
water. Add eggs and 3 cups flour. Beat with spoon or mixer. Mix until
smooth and light.
