I usually buy a whole Pork Loin at Costco. Divide it into thirds or fourths. Use 1 roast and freeze the rest. If you are cooking for a large crowd, use the whole roast and multiply the pistachio mixture 3 or 4 times.
Sear a small roast in 2 Tablespoons of olive oil. Top with pistachio mixture. Put in a roasting pan and bake in a 350 degree oven for 45 minutes or until meat thermometer reads 145 degrees. Remove from oven. Tent with foil and let set for 5 minutes before thinly slicing.
