1 small jalapeno pepper, minced (with seeds if desired)
1 Cup mayonnaise
1/3 Cup cilantro, finely chopped
12 flour tortillas
Instructions
Rinse the cod and pat dry. Cut into 2 X 1 inch pieces. Set aside. Place fry mix into a bowl.
Whisk in 1/2 to 3/4 cup water. Batter should be thin like pancake batter.
Mix flour, cayenne pepper, chili pepper, salt and pepper on a dish or pie plate. In a large skillet,
heat oil on medium-high heat. Oil should cover bottom and up about 1/4 inch. Dredge fish in
flour and dip in batter, allowing excess batter to drip off. Place in oil and fry on all sides until
browned, about 5 or 6 minutes.
To make sauce, combine mayonnaise, cilantro, lime juice, capers and jalapeno in a small bowl.
Assemble tacos with fish, lettuce, tomatoes, cheese, and avocado.
NOTE- I used frozen cod fillets that just require baking, instead of frying fish. Works great!
