Heat oven to 425 degrees;
take filets out of refrigerator 20 minutes ahead of cooking;
salt and pepper filets;
heat olive oil in heavy fry pan (cast iron best) at med high;
sear filets for 4 minutes per side;
put pan with filets into oven, uncovered for 5 minutes;
take out of oven and tent with aluminum foil for 5 minutes;
spoon over pan juices when serving.
