put aluminum foil down on baking pan (with a lip so that salmon oil
doesn't run off into oven);
put filets skin side down on foil;
dribble olive oil onto filets;
sprinkle with dried thyme leaves;
then sprinkle with panko crumbs;
bake, uncovered, at 450 degrees for 13 minutes;
take out pan with fish;
cut across a filet & see if it needs a minute or two more roasting.
Serve with lemon and capers or mayo/herbs/capers or tartar sauce.
