Preheat oven to 350 degrees F. Coat a 9-inch
pie plate with cooking spray. In a large
skillet over medium heat, cook ground beef 8 to
10 minutes, or until no longer pink; drain
liquid. Stir in onion powder and 1 cup cheese.
Place mixture in prepared baking dish. In a
medium bowl, whisk together eggs, mayonnaise,
half-and-half, salt, and pepper; pour over beef
mixture. Bake 25 minutes, sprinkle remaining
cheese on top, and cook another 5 to 10
minutes, or until firm in center. Let stand 5
minutes before serving.
