Process 2 cups of packed fresh basil leaves, 3/4
cup extra-virgin olive oil, 1/2 cup loosely packed
parsley leaves, 1/4 cup loosely pack fresh mint
leaves, 1 Tbsp. lemon zest plus 2 tsp. fresh lemon
juice from 1 lemon, t tsp kosher salt, and 1 clove
of garlic in a food processor or blender until
smooth. Add additional kosher salt or lemon juice,
if desired.
