in large skillet , brown pork tenderloins on all sides. Remove from skillet.
In same skillet, cook and stir onions and carrots in 1/2 cup chicken broth for 5 mns
Add remaining broth and pork, heat to a boil.
Reduce heat, cover and simmer 45-50mns.
In blender, puree pan liquid and mustard until smooth. Stir in parsley.
