Rinse roast and pat dry. Pierce well with fork on all sides. Pour
smoked salt evenly over all sides of roast and use hands to rub in to
meat. Repeat this same process with Hawaiian pink/red salt.

Place roast in small - medium ceramic dutch oven or covered roasting
dish. Pre-heat oven to convection setting at 275F.
|
|
|
Place roast in covered dish in oven and let bake for 2 hours. Remove
from dish, remove layer of fat (fat-cap) and shred pork to bite size.

Suggestions |
|
Serve on Hawaiian bread rolls with Hawaiian BBQ sauce as shredded pork sliders. Add slaw if desired.
