1 pinch red pepper flakes or more if you want it spicy
2 TB butter
8 cups chicken stock
Instructions
Brown sausage in pot with 1 TB olive oil. Once
brown, remove sausage from pot. Add 2 TB butter
to pot. Add carrots and onions. Let them sweat
in the butter - low heat, covered with little or
no caramelization.
Add garlic, red pepper flakes and potatoes into
the onion carrot mixture. Let cook for 2 to 3
minutes. Add your sausage back in.
Add about 8 cups of chicken stock. Throw in the
parmesan rind. Let cook for 20 minutes.
Add drained cannelini beans and chopped kale. Let
it cook for a few minutes to wilt kale.
Serve with Parmesan cheese & a quick zest of lemon
if desired.
