Preheat oven to 350 degrees. Grease and flour
9x13 glass pan.

Combine oil and sugar, and add eggs 1 at a time
blending well. Add vanilla.
|
|
|
In separate bowl combine all dry ingredients. Sift
dry ingredients into wet mixture.
|
|
|
Stir in pineapple, carrot, and nuts. Pour into
prepared pan and bake for 55-60 min. Be sure the
center is cooked and set. Frost with coconut
cream cheese frosting (separate recipe)

Can also do 2 layer round cake. Very dense but moist.
