In a large pot heat olive oil , add garlic and
cook until fragrant (2 min). Add broth
,tomatoes,sugar,3/4 C grated cheese, italian
herbs,salt and pepper. Bring to a boil, reduce
heat and simmer for 5 minutes. Stir in the beans
and spinach and continue to simmer. Stir in the
parsley and season with extra salt and pepper to
taste
