1/2 small red onion thinly sliced & cut into 1 inch pieces- about 1/4 cup
3 large cloves garlic
6 tbsp olive oil
1/4 cup red wine vinegar
1 tsp salt
1 tsp pepper
4 cups baby spinach
2 cups grape tomatoes halved
grated parmesan- optional
Instructions
Bring water to boil with salt. Cook pasta. Drain but do not rinse the pasta.
While pasta is cooking- place onions & garlic in large mixing bowl. Add the olive oil & vinegar to cover the onions. When pasta is drained, add to mixture & toss well. Add the tomatoes & spinach.
Toss everything together well & sprinkle generously with salt & pepper. Sprinkle with parmesan cheese.
